Ingredients:

8 medium fresh beets
1 cup apple cider vinegar
1/3 cup honey or maple syrup
1 tsp whole cloves
1 tsp whole allspice
1/4 tsp salt
Directions:

Scrub beets, trim tops, boil until tender (~25-30 min), peel and slice.
In a saucepan, combine vinegar, honey/maple syrup, cloves, allspice, and salt. Boil for 5 min.
Pour over sliced beets. Cool, then refrigerate 4 hours or overnight.
